Chef José was born in the notorious border city of Tijuana, Mexico. José became enamored with food when he tried Abalone for the first time, which his uncles caught on a fishing trip further down the Baja California shore. At age 20 José exchanged sunny Mexico for culinary Paris to expand his gastronomic horizons. After graduating Le Cordon Bleu he went back to explore the many regional Mexican c

uisines. With a solid base of classical French cuisine and the earthiness of Mexican cooking José loves exploring and combining modern ingredients and flavors with classic techniques and vice versa. Having a Dutch father and Mexican mother, Sabina was raised not only with both cultures but also with both cuisines. Brought up with by tacos and pancakes, beans and potatoes, Sabina’s palette has best of both worlds. After 15 years of organizing events, developing a Dutch mobile taqueria with a unique twist was the next adventure on her bucket list.
