Today we are visiting .co and had the opportunity to listen to the barista tell us about their concept. They provide work for prisoners and learn them everything about coffee roasting, blending and packaging. The coffee is then sold and served outside of the prison. Were visiting the HQ in Zaandam but you can find this coffee at Haarlemmerdijk in Amsterdam as well, soon opening 2 new locations!

6/6 so far the short update. We're still trying our new coffees and taking notes, the processing of content is showed down a little as we now have 2 little snoffeecob juniors 👶

5/6 you can't see it in this picture but we even use the needle take WDT for better extraction in our v60 coffee, taking during the bloom phase!

4/6 the WDT also helps with leveling out the grounds before you tamp the puck, avoiding a mess of spilt grounds on the table

2/6 ah look t those wonderful fluffy grounds. I've discovered WDT technique to create a nice and consistent puck of coffee without clumps of air pockets

In the mean time, this grinder is serving us amazingly well. The baratza encore was great but this one is so much more accurate! 6/6
