Greek-Style Roasted 🥔

Ingredients:
• 1 kg potatoes, peeled and cut into wedges
• 4 tbsp olive oil
• Juice of 1 lemon
• 3 garlic cloves, minced
• 1 tsp dried oregano
• ½ tsp dried thyme
• 1 tsp salt
• ½ tsp black pepper
• 1 cup vegetable broth or water
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Place the potato wedges in a large baking dish.
3. In a small bowl, mix the olive oil, lemon juice, garlic, oregano, thyme, salt, and black pepper.
4. Pour the mixture over the potatoes and toss them well to coat.
5. Add the vegetable broth (or water) to the dish.
6. Roast for about 45-50 minutes, stirring halfway through, until the potatoes are golden and crispy on the edges.
7. Serve warm, garnished with extra oregano or fresh parsley if desired.

Spanakorizo (Spinach Rice) 🌱

Ingredients:
• 1 ½ cups of rice (preferably short-grain or medium-grain)
• 1 tablespoon of olive oil
• 1 medium onion, chopped
• 2 garlic cloves, minced
• 1 kg (about 2 pounds) fresh spinach, washed and chopped (or frozen spinach)
• 3 cups of vegetable broth or water
• Salt and pepper, to taste
• 1 teaspoon dried dill (optional)
• Juice of 1 lemon
• Fresh dill or parsley for garnish (optional)
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Stir in the rice and cook for a couple of minutes until it’s lightly toasted.
5. Add the chopped spinach and stir until it wilts (if using fresh spinach), or if using frozen spinach, let it cook down for a few minutes.
6. Pour in the vegetable broth or water, add salt, pepper, and dried dill (if using). Stir well.
7. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is fully cooked and the liquid is absorbed.
8. Once done, remove from heat and stir in the lemon juice.
9. Garnish with fresh dill or parsley, if desired, and serve warm.

Here’s the recipe for a Greek Village Salad for two people🌱

Ingredients:
• 2 tomatoes, cut into large chunks
• 1/2 cucumber, sliced
• 1/4 red onion, thinly sliced
• 1/2 cup olives (e.g., Kalamata)
• 100g feta (optional, for vegan version you can use vegan feta)
• 1/2 teaspoon oregano
• 2-3 tablespoons olive oil
• 1 tablespoon vinegar or lemon juice
• Salt and pepper to taste
Instructions:
1. Prepare the ingredients: Cut the tomatoes, cucumber, and onion and place them in a bowl.
2. Add the olives: Toss in the olives, and if using, add the feta in chunks or slices.
3. Season and sweeten: Sprinkle with oregano, then drizzle with olive oil and vinegar (or lemon juice). Season with salt and pepper to taste.
4. Toss and serve: Mix everything gently and serve immediately for the freshest taste!

Ingredients:
• 500 g potatoes (preferably waxy)
• 1/4 cup olive oil
• 2-3 tablespoons red wine vinegar
• 1/2 teaspoon Dijon mustard (optional)
• 1 small red onion, finely chopped
• 1/2 cup Kalamata olives, pitted and sliced
• 1/4 cup chopped fresh parsley
• Salt and pepper to taste
Instructions:
1. Boil the potatoes in salted water for about 15-20 minutes, or until tender. Drain and let them cool slightly.
2. Cut the potatoes into bite-sized pieces while they are still warm.
3. In a large bowl, combine the potatoes, onion, olives, and parsley.
4. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard (if using), salt, and pepper.

Here’s the Greek version of coleslaw (Lahanosalata)

Ingredients:
• 1 medium green cabbage, shredded
• 2 medium carrots, grated
• 1 small red onion, finely chopped (optional)
For the dressing:
• 3 tablespoons olive oil
• 2 tablespoons lemon juice or vinegar
• Salt and pepper to taste
