Here's a simple recipe for a plain, buttery cake:
Ingredients:
1 cup (225g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1 ½ cups (190g) all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
1 tsp vanilla extract
½ cup (120ml) milk
Instructions:
1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.
2. Cream the butter and sugar: In a large mixing bowl, beat together the softened butter and sugar until light and fluffy, about 3-4 minutes.
3. Add eggs: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
5. Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture in two or three additions, alternating with the milk. Start and end with the dry ingredients. Mix until just combined—don't overmix.
6. Bake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
7. Cool: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
