Here we use Silver Hill Irish Duck, famously known as the best duck breed in the world for its exceptional flavour, tenderness and lack of gaminess. It is most commonly prepared and served as traditional roast duck, but we began to ask the question:

Our Irish ducks are dry-aged for 48 hours before they’re roasted to perfection and our premium sauces to complement the duck are made using the freshest ingredients.
