Long before coffee became known for its beans, coffee-growing communities found value in every part of the harvest.
The word “cascara” comes from the Spanish word for “husk” or “peel.” For generations, farmers would carefully dry the outer skin and pulp of ripe coffee cherries instead of discarding them, then steep them in hot water to create a naturally sweet, fruity drink. It was a simple way to make full use of the harvest while enjoying another side of the coffee cherry.
A reminder that every coffee cherry has a story—and every part of it has a purpose. 🌿
