Forty-five years ago, Chef Takebayashi Tatsuo traded his baseball glove for a sushi knife. After an injury ended his athletic dreams, a simple pamphlet from his father opened a new door, turning a moment of doubt into a lifetime of mastery.

There is a playful soul behind his quiet intensity. He often jokes that he only ended up in the kitchen because he was "clumsy" at everything else, yet his precision at the counter proves otherwise.
