Chocolate takes a savoury turn at ROOTS! 🍽️

Created with BORCO Chocolate, ‘A Hint of Cacao’ features two starters and one savoury dessert, each exploring cacao in its own unexpected way.

Choose from chicken liver mousse on toasted brioche, slow-braised adobo beef brisket tacos or cured sheep’s milk Comté paired with caramelised onion and dark chocolate.

Available now until 31 August at Roots. Come curious for unique flavours. 🍫

A little cacao, thoughtfully placed! 🍫

Created in collaboration with BORCO Chocolate, this special menu brings a distinctive touch of cacao to three very different dishes. Each pairing is unexpected in its own way, with the savoury Comté and liver roselle toast being particular highlights, alongside a taco with bold, beefy depth.

What a pleasure it was to welcome some of Kuching’s chefs to ROOTS at the Old Court House for an evening of good company and delicious Australian lamb.

It was also an honour for Chef John to craft something special with the premium Australian lamb provided. We’re so happy our space was chosen to bring this memorable dining experience together. Thank you to Supreme Cold Storage for the opportunity! 🥂✨

Australian lamb, through a Bornean lens ⭐️

We had the pleasure of hosting a dining experience with Supreme Cold Storage, bringing together chefs, restaurateurs, hoteliers and industry friends over a menu shaped by premium Australian lamb and familiar flavours of Sarawak 🥩

Curated by Chef John Lim and the ROOTS team, each dish explored how local botanicals, indigenous ingredients and traditional techniques could bring new depth to a globally loved ingredient.

A heartfelt thank you to Supreme Cold Storage for choosing our space and giving Chef John and the Roots team the opportunity to curate something meaningful with Australian lamb!

Tender, rich and beautifully balanced, the lamb became more than the centre of the plate. It became a meeting point between two culinary worlds 🍽️✨
