christmas has always been the most wonderful season of the year with everything spiced and nice. spices and herbs has always been intimidating and this year felt like the year to take a leap of faith with it.

taking classic cookies but adding a christmas twist to it:

first, letting ginger and cinnamon rest with brown sugar and lemon zest and incorporated into a classic white chocolate cookie base for a sweet but aromatic bite as dark chocolate get double boiled down with rosemary and orange and added into a classic burnt butter chocolate sea salt cookie dough for an additional layer of complexity.

honestly turned out better than expected, so excited to share it hehe

to us, a good cookie is a vessel for an array of imaginative flavors. sweet, savory, spicy, tangy. and this cookie is the definition of savoury and sweet, a baby between the east and the west.

miso, a fermented bean paste typically used in japanese cuisine provides a significant depth of flavor to the brown butter cookie base. experimenting with miso has really tingled my taste buds and opened up new possibilities.

its pairing with salted caramel gives it an extra layer of complexity.

simple ingredients, sugar, water and cream; yet attentive precision. a little too long and it turns bitter, a little too less and it’s not caramelized.
