Tree Monk is a coffee roaster based in Kota Kinabalu, in the Northern Borneo state of Sabah. The multicultural residents of Sabah carry with them a long history of drinking the very strong bitter-flavoured Robusta coffee, which is served abundantly throughout local eateries, locally known as the Kopitiam. Despite the affection of the locals for such coffee drinks, Tree Monk aims to introduce an alternative way to look and drink coffee. From where the coffee beans come from, the different grades of coffee beans, how the coffee beans are treated and roasted and ultimately, how they are transformed into the drinks in the hands of the final consumer. Much effort has been put into the many stages of coffee from bean to cup but less is known on the appreciation of coffee. Tree Monk aspires to bring forefront the dynamic characteristics of the coffee beans, which includes the vast range of flavours, taste and texture. With them, also the stories of those who were involved in the process of bringing that drink to the table.
