We now serve Hawthorn as a palate cleanser, as a hot counterpoint to the cold Lo Han Guo, bringing out the familiar sweet and tart flavours of both ingredients.

Monk Fruit, or Lo Han Guo, has long been used in Chinese tradition, particularly as a soothing drink for the throat and to help ease coughs. It is also known for its natural sweetness and cooling qualities.

We now serve Lo Han Guo as a palate cleanser, paired with hawthorn in a single drink with both hot and cold elements. The contrast in temperature creates a refreshing sensation, while bringing out the familiar flavours of both ingredients.

Lowland Reverie, named after the low-lying landscapes of the Netherlands and Belgium, is a menu inspired by Chef Kong’s recent journey through both countries. Each dish reflects a different experience along the way, from traditional dishes and familiar flavours to unexpected inspirations like Miffy and Belgian chocolate.
