Fried rice is a versatile and cross-cultural dish. It can be prepared in many different ways: Chinese, Thai, Korean, Burmese, etc. Kampung literally translates to village, but nasi goreng kampung usually refers to traditional recipes in Malaysia and Indonesia.

Most of the work goes into making the chili paste. After that, you just need to fry the rice with shallots, garlic, belacan (shrimp paste) and anchovies.

This popular flatbread dish originates from southern India. The best roti canai, made with ghee and flour, are crispy and flaky on the outside and buttery smooth on the inside.

They are usually served with dhal or curry (and sometimes sugar). Roti Canai can be modified in many ways. They are prepared either quite simply as flatbreads (roti kosong), or with a variety of fillings: egg, onion, mushrooms, cheese and even banana slices.

This popular Chinese dish is traditionally fried in pork fat, but there are halal options that will appeal to Muslim diners.

Although his recipe seems simple, it requires quite a bit of skill to stir-fry rice noodles, soy sauce, chilies, belacan, shrimp, clams and bean sprouts in a wok over very high heat.
