Here’s a little journey into what went down during the Brew The Roast competition at the Lalaport Coffee Festival. A full 90 minutes on stage, every second counted!
From setting up my working station, checking the beans, and calming the nerves—it was all about getting ready to brew my best
Once the timer started, it was just me, the coffee, and the clock. 90 minutes of focus, adjustments, and making sure every detail came together.
There were challenges, small wins, and a lot of learning moments along the way. But that’s what makes it exciting—you never stop improving.
Thanks again to Barista Guild Asia and Lalaport for making this possible. Competing here was such a valuable experience.
This wasn’t just a competition—it was about growth, sharing coffee, and connecting with the community. Hope you enjoy seeing my 90-minute coffee journey!

Currently sitting in the Top 3 of the overall KPC 2025 standings, Wen Han is a roaster who has consistently impressed. Throwback to an amazing three days at Good Coffee Festival! Thank you all for your support – we were so happy to meet everyone at the event. Since this is our once-a-year appearance, it truly meant a lot to us. We hope to see you again at the next festival! ☕✨

A big thank you as well to for bringing together coffee shops from everywhere and making the coffee community more vibrant each year. Grateful to be part of it! 🙌

Ok，我又回来了，继续Tiffz有始有终的故事
今天我们就分享顾客最常给予我们宝贵的意见，不然我们一直被顾客抱怨，以为我们视而不听，其实我们不止一直都有在听，而且我们在行动上不停努力地改着

抱怨一 : 菜单不够多选择 (最多也最常见的)
其实我们是很专业地分析这问题，多数人不懂是正常的，我们明白， 但今天我也想让你们去明白我们已明白的东西

1) 因为一间店太多选择会导致亏损更严重，怎么说呢？从我们开店第一天起我们就已经听到这‘’抱怨‘’了...做么你的店没卖炒饭的，做么没卖Chicken Chop的，做么没卖肉骨茶的，做么没卖煮炒的，做么没卖奶茶的， 做么没卖..........( 同行们，你们帮我填充好吗？😅 )
卖那么多种不同的=厨房每天都要准备那么多食材 (看懂了吗? 还是不懂? Ok,我继续)
在生意上我们称它为Wastage, 就是没人点然后卖不完的食材在几天后没用到不新鲜就必须丢掉了的食材，不然又中新的投诉 - ‘’这个不新鲜那个不新鲜‘’了😅
‼️注: 这是多数新手F&B常致命的要点
不信你注意看看，那些Menu多多的过不久在比较不畅销的菜单上贴上"Not Available"

2) 我们之前都有不停的推出新菜单，但我们又被抱怨了~ 做么我喜欢的旧菜单没有了？
(其实我们那时才觉悟原来我们的每种菜单都它的忠实粉丝的😂)

3) 那些都喜欢问有新菜单了吗的顾客，看完新菜单后都会接着说:"不要紧, 我的照旧", 你们看看我们的忠实粉丝真的很忠实的 ( 注: 不是全部，只是多数, 请不要喷我🫣) 是你吗？ 是的话请举手😂

4) 好了，是时候让你们知道我们在故事的背后真的在真心解决这头痛的问题

🔥 4th Place at KPC2025 Station 2 – Wen Han Lee from Mind Coffee Roastery! 🔥

Big applause for Wen Han Lee (Wenhan Lee) from Mind Coffee Roastery , who secured 4th Place with a roast that truly showed thoughtful experimentation and control! 🙌☕️

To dial in the flavor, Wen Han ran two different roast styles using the same roast level — and chose Batch 1 after careful cupping comparison. Using a 2kg roaster with a 1kg charge of natural-processed beans, he applied a unique heat rhythm: 🔁 dialing down, building up, and ending with a clean and controlled finish post-crack.

By adjusting airflow and flame timing just before and after first crack, he extended the development to 1:24, creating a cup full of layered aroma, flavor, and balance. 🎯💥

Huge congrats, Wen Han! Your curious, methodical approach delivered a roast with both heart and structure! 💡🔥
