Ari's Cactus Grill is closed for the season! We will re-open in September. We will have all of your favorite menu items from Chef Reyes as well as some new fresh and delicious dishes for you to try. Next up, SALSA!! Chef Reyes has over 50 amazing salsa recipes up his sleeve, but the two current standard salsas are designed to please the diverse palate of Ari's Cactus Grill customers. The milder Pico de Gallo is made with fresh tomato, onion, jalapeno, and cilantro diced into a delicious chunky texture you have to dig in and pile on your chip. The spicier salsa is started with roasting the tomatoes and tomatillos, then boiling them together with the rest of the ingredients. Here it is on the stove approaching a soft boil.

We've had a lot of good feedback on our chips and salsa. First the chips; Chef Jose drives to a remote tortilla factory SPECIFICALLY for the tortillas to make our chips. All of the other restaurants in town either make chips from normal tortillas or buy thicker chips from a restaurant supplier. As you can see these are amazingly thin by comparison, crispy with a rich corn flavor. Made fresh every couple of hours. I wasn't even the least bit surprised when neighboring restaurants started coming in to buy them from us.

This one is a real favorite! It's a spinach salad with grilled shrimp and orange, tossed in a scratch made orange-chipotle vinaigrette. Chef Jose outdid himself on this one!

This is the amazing Mexican pizza the guys make; two flour tortillas with cheese in between for the light flaky crust with chicken, bell peppers, cheese, tomatoes, and ranchero sauce on top!
