Une recette peut voyager pendant des générations avant de devenir, un jour, quelque chose que l’on considère simplement comme « chez nous ».

C’est notamment cette notion d’héritage et de transformation qui a nourri les échanges jeudi soir avec Maya de Salle. Dans nos assiettes mauriciennes se croisent des histoires venues de plusieurs horizons, adaptées aux produits disponibles, aux époques, aux familles et aux habitudes jusqu’à composer une identité culinaire qui nous est propre.

L’assiette devient alors une petite archive du quotidien : imparfaite, vivante, constamment réécrite, mais profondément révélatrice de la société qui l’a façonnée.

Merci à Maya de Salle et à tous ceux qui ont contribué à faire de cette nouvelle édition d’À Table Avec… un véritable moment de partage et de réflexion.
