A 58% chocolate parfait sandwiched between oat and hazelnut wafers, topped with whipped cream, caramelised white chocolate, candied orange peel, and salted hazelnuts. Castille Place takes its name from the Spanish Knights who once called it home. Spain remains Europe's largest producer of oranges — and the candied orange peel on this plate is its quiet presence on the table.

Peppered Tuna for 2, inspired by South Street 🌿

600 grams of local wild tuna, dry-aged for depth and complexity, grilled and served rare. Dressed with a shio ponzu and a fresh herb dressing of parsley, chives, and dill — alongside a baby gem salad with nectarines, mint, and anchovies. Dry ageing removes moisture and unlocks a depth of flavour that needs little else. The statue of Grand Master Jean Parisot De Valette stands on South Street — the man who defended Malta during the Great Siege of 1565. In medieval times, pepper was traded as currency. Here, it crusts the tuna.

Local Summer Salad, inspired by Old Hospital Street 🌿

Five leaves — radicchio, baby gem, chicory, lollo bianco, and red endive — dressed in a tomato dressing, resting on local heirloom cherry tomatoes marinated in olive oil, pickled watermelon, and a Goat Cheese Royale. Finished with grated Ġiżwita goat cheese from Delectat and Jamon Iberico. Local heirloom tomatoes are more flavourful by nature — grown on a smaller scale, never crossbred, and harvested at their best. On Old Hospital Street, a door plaque dedicated to Our Lady Ta' Pinu brings Gozo's most revered shrine into the streets of Valletta. The extra virgin olive oil in this dish travels the same path — from Gozo, to this plate.

The chef selects the seasonal fish to showcase its freshness and natural sweetness — nothing more, nothing less. The Manoel Theatre has graced this street since 1731 — one of Europe's oldest stages, built on the conviction that the unexpected is worth experiencing. This dish performs in the same spirit.

Ravioli, inspired by Merchant Street 🌿

Rabbit ravioli, stuffed with rabbit shoulder and leg slow-cooked confit in duck fat at 90° for five hours, sheep and goat ricotta, tarragon, and lemon zest — served with a rabbit loin, roasted onion sauce, and smoked olive oil. The ricotta comes from Mark and David, local artisanal cheesemakers crafting from Maltese sheep and goat milk. Merchant Street is where Sir Temi Zammit made a discovery that changed Malta's relationship with milk for good. Today, that same transformation allows us to bring you a dish defined by the finest local ricotta.

Built on Josef's locally grown organic vegetables, carefully harvested at their best. The Church of Our Lady of Liesse has long marked its seasons with small acts of giving — bread, sweet cakes, flowers. The zucchini flower on this plate is a quiet nod to that same tradition.

Acquerello Risotto Prawn, inspired by Republic Street 🌿

Prawn bisque risotto, cooked directly in the bisque and infused with lemongrass, ginger, kaffir lime, chilli, and cardamom — topped with three pieces of raw local red prawn, finger limes, coriander cress, and chive oil. The Maltese red prawn is known for its delicate, buttery texture and naturally sweet taste. The Grandmasters' Palace on Republic Street was built on a lease of five grains of wheat. This risotto is built on the same foundations.
