Second time we've featured kadai this month and honestly it deserves the repeat. Spicy street style kadai with lamb this time instead of chicken, richer, heartier, built for a Friday where you actually want dinner to feel like an event. Bold tomato base, real heat, nothing shy about it. If last time wasn't enough convincing, maybe this is.

Same pod, five totally different jobs. In korma it's doing quiet, gentle work, keeping everything warm without shouting. In keema it's the black cardamom bringing that deep, smoky backbone. In dhaba curry it somehow still holds its own next to a lot of heat. In rogan josh it rounds off all that chilli so it doesn't just hit you flat. And in kadai it sneaks in right at the end almost as an afterthought, except it's not.

One spice, five completely different curries, and you'd never guess it was the same ingredient doing all that work. Save this, you'll notice it differently next time you order.

People take one look at the colour of rogan josh and assume it's going to blow their head off, and that's fair, it looks the part. The truth is it's deep and warming more than it's genuinely hot, the colour comes from Kashmiri chilli which is more about flavour and colour than heat. Lamb is the only way we serve it, no substitutions. If you've been avoiding this one thinking it's too much, it's probably not.

If you think Indian food is just one flavour turned up or down, this one's going to surprise you. Coconut spice explosion comes from a totally different part of India, coastal, warm, coconutty in a way that's completely its own thing next to the creamier curries on our menu. We think it's the most underrated bowl we make. Chicken keeps it balanced without fighting the coconut.

There's a version of Indian food that's soft and comforting and a version that just hits you straight in the chest, and dhaba curry is very much the second one. This is the kind of curry that reminds you of eating on the side of a road somewhere with your hands, no plates, no cutlery. We paired it with lamb because nothing else stands up to it the same way.

This one starts a lot greener than people expect. Mustard seed, garlic, and turmeric all cooked down before the cream even goes in, and that's the part that turns it from just spinach into creamy spinach delight. Paneer soaks it all up better than anything else on the menu. Wanted to show the quiet start behind the bowl that always gets called comforting.
