It gives me great pleasure to welcome you to my pizza and pasta restaurant – a place for you to enjoy the very best that Italian food has to offer! I am very passionate about good Italian food. After all, what could be better than a freshly baked pizza or a steaming bowl of pasta – topped with delicious ingredients and washed down with a fantastic glass of wine? I wanted Hugo’s Pizza & Pasta to be
a representation of all the good things in life, and I believe it does just that! We’ve established a team of highly trained professionals, including our pizziaolo Dan, who has created a menu of both favourites and fabulous new ideas for you to try. In fact, many of our dishes have a fusion twist – with unusual ingredients like candied walnuts, yellow curry, coconut milk, ginger and oyster mushrooms. However, we’ve also packed in some extravagant favourites, like truffle cream, bacon roulades, Mozzarella fior di latte, and top quality Parmesan. Trust me: it tastes wonderful! I’ve already picked out my personal favourites, including the Tagliatelle alla Chef (with fresh beef strips and truffles!), the Ravioli con Coniglio, the wholesome veggie salad and the black truffle risotto. Launched in early 2016, Hugo’s Pizza & Pasta is the latest addition to the Hugo’s Group - the brainchild of the dynamic Maltese entrepreneur Hugo Chetcuti, whose business empire dominates Malta’s main entertainment hub. Located in Paceville, adjacent to the brand new Hugo’s Boutique Hotel, Hugo’s Pizza & Pasta was inspired by Hugo’s love of all things Italian – from the food and wine, to the passion that is injected into every dish. Meet Dan – the head pizzaiolo behind Hugo’s Pizza & Pasta in Paceville, Malta! Dan is a pizza whizz. Not only has he taken part in the Pizza World Championships – but he won the title in 2010! Yup, Dan knows good pizza when he creates one, and now we’re thrilled to have him cooking up a storm in our kitchen and producing some of the yummiest pizzas we’ve ever tasted. This is his story:
“When did I discover pizza? Well, one of my earliest memories is actually pizza related!” Dan says. “I was visiting a pizza restaurant in my home country of Romania as a little boy when the chef there spotted me and, liking my interest, told me I could be a pizzaiolo when I grew up!
“It’s a thought that clearly stuck with me, as I first joined a pizza kitchen in Italy in 1998 and remained in the industry ever since.
“Now I’m totally dedicated to making the best pizzas you can imagine. Here at Hugo’s we focus on every stage of the process, from the creation of the lightest possible dough, to the choice of the most delicious toppings. Creativity is required at every stage – I love coming up with unusual combinations – whether it’s sweet and savory, or the use of eastern ingredients.
“And our customers seem to love it – they have really responded well to the addition of more fusion-style pizzas but they also love our classics too. After all, it can be hard to beat the style and simplicity of a good margarita! Plus, Hugo has chosen to invest in one of the world’s best rotary ovens and it cooks our pizzas to perfection with complete precision and consistency. The results really do taste great.
“As for my favourite pizza? Well, that changes everyday, so it would be wrong of me to choose! But I do love trying something different whenever I can. I don’t like to get bored, so I spend hours in the kitchen developing new flavor combinations and getting to know our ingredients. And the results? Well, we already have a steady flow of regulars, so we must be doing something right.
