A kitchen you can come back to

Rita left, came back, left again, came back again. Ten weeks last year. Five after Christmas.

That is harder than it sounds.

It means this kitchen has to hold a standing capability, not run a campaign. Someone walks in after eight months away and expects food ready the following week — same portions, same standard, same collection day, as if they had never stopped.

No ramp-up. No waiting list. No starting again from nothing.

An empty kitchen at seven in the morning is not an idle one. It is a kitchen ready.

What was in the Slimming Meal Plan boxes?

Cauliflower roasted whole under a broccoli crumb. Salmon with flat beans. Chicken with potato and cauliflower. Sweet potato split and filled. Quinoa with butternut. Grilled vegetables, no two boxes quite the same.

Ordinary food. That is deliberate.

Nothing powdered. Nothing reheated twice. Nothing that announces itself as diet food.

Josephine went to weddings, breakfasts and social occasions across her ten weeks, and never once sat at a table thinking about what she couldn't have — because the week around each of them had already been built to take it.

This is what a week looks like before it reaches anyone's fridge.

Antonella and Lennie, in the kitchen, working through the plans taped above the pass. Every one built around a particular week — the work schedule, the family, the wedding on Saturday, the weekend away.

We don't believe in strict diets or in giving up what you love. We believe in balance. The plan moves so that life doesn't have to.

Each week our clients collect freshly prepared lunches and dinners, ready to refrigerate. Each day, heat and eat. Minutes, not hours.

One brief a week, ten weeks running

Two identical soups. Two different labels.

One says Claudia, week eight. The other says Josephine, Monday lunch.

That is the whole job, on a lid.

Josephine's plan was not written once and repeated. It was rewritten every week — a new specification from Antonella each time, built around whatever the coming seven days actually held. The wedding on the Saturday. The flight on the Wednesday. The beach days.

Ten weeks. Ten briefs. One customer, alongside everyone else's.

Every Monday a different specification. Every Monday the same deadline.

Most kitchens cook a menu. This one cooks a schedule.

There is no wrong thing to order up at the Musta Rooftop.

Something hot early. Something long and cold when the sun is still on the roof. Something with a stem in it once the Dome goes dark.

With alcohol or without, and neither is the consolation. Both get built by the same hands.

Festa week, the 10th to the 13th. The eve of Santa Maria on the 14th.
