Our preserved aubergines are grown in our own fields and processed with great care. Once harvested, they are brought to our premises, where they are washed, sliced, and lightly salted to reduce bitterness. They are then washed again, carefully cooked, and packed into jars to preserve their authentic flavour and quality.
