UNE CRÉATION…

Une pastilla… qui n’en est pas vraiment une.
À l’extérieur : le voile croustillant de la pastilla, sucre glace et cannelle.
À l’intérieur : un cake moelleux à l’amande, une crème signature à la pâte d’amande torréfiée, un caramel beurre salé aux amandes, et un croustillant gourmand qui rappelle l’âme de la pastilla aux amandes.

Tradition marocaine… mais racontée autrement.

وصفة كريمة التغطية السحرية للكيك (Magic Coating Cream)

المكونات
• 520 غ شوكولاتة بيضاء عالية الجودة
• 155 مل كريمة سائلة كاملة الدسم 35٪
• 100 غ زبدة حيوانية 82٪ (بدرجة حرارة الغرفة)
• حبة فانيليا بوربون

طريقة التحضير
1. تُقطع الشوكولاتة البيضاء وتوضع في وعاء.
2. تُسخَّن الكريمة السائلة مع بذور حبة الفانيليا حتى تقترب من الغليان.
3. تُسكب الكريمة الساخنة فوق الشوكولاتة البيضاء ويُترك الخليط لمدة 30 ثانية.
4. يُحرَّك حتى نحصل على غاناش ناعم ولامع.
5. يُخفق الخليط في العجانة باستعمال المضرب المسطح (الـ palette) حتى يبدأ اللون بالفتح قليلاً.
6. تُضاف الزبدة الطرية تدريجياً.
7. يُستمر في الخفق حتى نحصل على قوام كريمي فاتح اللون وناعم جداً مناسب لتغطية الكيك..

ملاحظات للحصول على أفضل قوام
• أفضل درجة استعمال للكريمة تكون حوالي 22–24°C.
• إذا أصبحت الكريمة قاسية قليلاً: تُسخن لثوانٍ قليلة باستخدام مسدس هواء ساخن (الديكابور) حتى تعود إلى القوام المناسب..
