You’ve probably seen his face on our Instagram, watched him on our Coffee with Simon episodes, or spotted him behind the bar but somehow, we’ve never actually introduced him. Chaotic of us, we know. So better late than never. 🫠
Everyone, meet Simon🤍
Simon has worked hand in hand with roasters, and his coffee knowledge genuinely goes beyond anything we could have dreamed of when we hired him. Like… we asked for a barista, and we got a walking coffee encyclopedia. We’re not complaining.
In his spare time, because apparently a full week of coffee isn’t enough, he films his own series at home called “one month, one roaster.” Just for fun. Just because he loves it that much. We told you. Encyclopedia.
Thanks to all of that, Simon is the one hosting our cupping sessions and latte art classes. And if you’ve been to one, you already know he makes them seriously fun.
Now. Here’s the part where we have to be honest with you.
Simon is the most lovably clumsy human we have ever met. 🫶 If your order comes out a little… creative, just know it came from a place of love. Also know that while he handed you the wrong thing, he was already mentally designing his next slow coffee recipe and honestly we can’t even be mad about it.
We are so genuinely happy to have him. Chaotic, clumsy, coffee-obsessed and all. Welcome to the spotlight, Simon. You deserve it. 🖤☕
