이번 주 2주년 토요일 행사 안주 소개드립니다🐢

이번엔 훈제오리 냉채를 준비해봤습니다
신상 IPA들을 많이 드셔주시길 바라는 마음으로(?) 가볍고 산뜻한 안주를 준비해봤는데요

•화채 - 5%
한국 스타일 사워 - 끽비어
-‘화채’는 여름 하면 빼놓을 수 없는 간식인 화채에서 영감을 받은 맥주로 집 집마다 다양한 레시피가 존재하겠습니다만, 우유를 넣어 만드는 양조 팀의
‘이’모 양조사님 댁의 하우스 스타일을 따라 일단 유당(Milk Sugar)을 넣 고 시작했습니다. 여기에 가장 중요한 수박은 농축액이나 퓨레 등 가공된 저 품보다 신선한 수박의 맛을 오롯이 전달해 드리고 싶어 새벽 일찍 가락시징 에 나가 직접 수박을 공수해왔습니다(충북 음성산).

6월 월간인 참외 사워와는 다르게 최대한 패키징 직전에 수박을 넣어 직관 적인 수박의 풍미를 내려고 의도했습니다. 이렇게 많은 수박은 처음 손질해 봤는데, 작업 후에 양조 팀 모두가 수박 손질에 초고수가 되어버렸습니다.
수박만으로는 뭔가 아쉬워 화채에 토핑을 얹는 느낌으로 파인애플과 복숭아 퓨레를 추가로 넣었습니다(물론 메인으로 들어간 수박의 양이 압도적으로 많기 때문에 주의를 기울이지 않으면 잘 안 느껴지실 수도 있습니다).

•Hwa Chae - 5%
Korean Style Sour - Ggeek Beer
-“Hwachae” is a beer inspired by hwachae, an indispensable snack in summer, and there will be various recipes from house to house, but we started with Milk Sugar, following the house style of the brewing team’s “Lee” brewery. The most important watermelon here is to deliver the taste of fresh watermelon than processed watermelon such as concentrate or puree, so we went to Garak-si-jing early in the morning and airlifted the watermelon ourselves (Eumseongsan, Chungbuk).

Unlike Korean melon sour, which is monthly in June, we intended to add watermelon as much flavor as possible just before packaging to give it an intuitive watermelon flavor. This was my first time trimming so many watermelons, and after the work, the brewing team all became very skilled in trimming them.
Watermelon alone was a bit disappointing, so we added pineapple and peach puree as if we were putting toppings on the fruit salad (of course, the amount of watermelon as the main dish is overwhelming, so you may not feel it well if you don’t pay attention).

-스페인 바르셀로나 기네우, 아르헨티나 부에노스 아이레스 후구에테스 페르디도스 두 양조장 콜라보 맥주, 화이트와인에 주로 사용되는 바르셀로나 현지 포도와 자연에서 얻은 야생효모를 이용해서 자연발효된 맥주를 오크배럴에서 약 2년간 에이징 후 패션프루트 과육(1,000L 당 170KG)을 넣고 3개월간 2차 에이징을 하였습니다.

•와일드 프룻 심포니 퀸스 - 6.1%
오크 배럴 숙성된 과일 와일드 에일 - 기누에 x 라 퀸스 브루잉
-스페인 마드리드 라 퀸스, 바르셀로나 기네우 두 양조장 콜라보 맥주, 자연발효된 맥주에 나바라지역 퀸스(유럽 모과)(1,000L 당 130kg)을 넣고 오크 배럴에서 2년간 에이징 하였습니다.

뉴잉 트리플 IPA - 브루어리 을를
-시트라, 넬신 소빈, 갤랙시 홉

•Sour Fantasy Passion - 5.5%
Wild Ale - Guineu Craft x Juguetes Perdidos
-Two breweries, Guineu, Barcelona, Spain, & Buenos Aires, Argentina, Juguetes Perdidos, and naturally fermented beer using local Barcelona grapes and wild yeast, which are mainly used in white wine, were aged in Oak Barrels for about two years, followed by a second aging of passion fruit pulp (170 KG per 1,000 liters) for three months.

•Wild Fruit Simphony Quince - 6.1%
Fruited Wild Ale - Guineu Craft x La Quince Brewing
-Spain Madrid La Quince, Barcelona Guineau Brewery Collaboration Beer, naturally fermented beer with Navarra Regional Quince (130kg per 1,000L) and aged in oak barrels for two years.
