Yummy Spaghetti
Ingredients:
2 lbs spicy sausage, casing removed
1 small onion, chopped
3-4 garlic cloves, minces or crushed
1 can diced tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounces) cans tomato sauce
2 cups water (for a long period of simmering for flavors to meld. If you don’t want to simmer it as long, add less)
3 teaspoons basil
2 teaspoons dried parsley flakes
1 ½ teaspoons brown sugar
1 teaspoon salt
¼ - ½ teaspoon crushed red pepper flakes
1/4 teaspoon fresh ground black pepper
1 lb thin spaghetti
Parmesan cheese
Directions:
In large heavy stockpot, brown the sausages, breaking up as you stir.
Add onions and continue to cook, stirring occasionally until onions are softened.
Add garlic, tomatoes, tomato paste, tomato sauce and water.
Add basil, parsley, brown sugar, salt, crushed red pepper and black pepper.
Stir well and barely bring to boil.
Stir in red wine.
Simmer on low, stirring frequently for at least an hour. A longer simmer for a better sauce, just be careful not to let it burn!
Cook spaghetti according to package directions.
Spoon sauce over drained spaghetti and sprinkle with parmesan cheese.

Chipotle peppers in adobo sauce: A spicy condiment of chiles, herbs and vinegar. The sauce is medium hot, with a smoky, slightly sweet flavor. It's good in chili, soups and barbecue sauces.

Chili Recipe:
Ingredients
3pounds beef or pork
2teaspoons sunflower oil
11/2 teaspoons salt
1 bottle of beer, preferably tusker
1 container salsa
30 tortilla chips
2 *chipotle peppers in adobo sauce, jalapenos or just any hot chilies, chopped
1tablespoon adobo sauce
1tablespoon tomato paste
1tablespoon chili power
1tablespoon ground cumin

Directions:
Place the meat in a large mixing bowl and toss with oil and salt.set aside.
Heat the pressure cooker over high heat until hot. Add the meat in 3 or 4 batches and brown on all side, approximately 2minutes per batch. Once each batch is browned, place the meat in a clean large bowl.
Once all of the meat is browned, add the beer to the cooker to deglaze the pot.
Scrape the browned bits from the bottom of the pot. Add the meat back to the pressure cooker along with the salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili power, and ground cumin and stir to combine. Lock the lid in place. When the stem begins to hiss out of the cooker, reduce the heat to low, just enough to maintain a very weak whistle. Cook for 25minutes.Remove from the heat and carefully release the stem. Serve immediately.
