ゲワールは、ラジャスタン州をはじめ北インド全域で親しまれている、蜂の巣のような繊細な網目構造とサクサクした食感が特徴の伝統的なお菓子です。小麦粉の生地をたっぷりのギー（精製バター）で揚げる職人技で作られ、甘いシロップを染み込ませた後、サフラン風味の濃厚な練りミルク（ラブリー）とナッツを贅沢に添えて仕上げます。繊細な食感を作るには高湿度が欠かせないため、北インドの雨季（サーワン月）を代表する季節限定スイーツとなっています。
