「閉店のお知らせ」
2022年1月29日(土)を持ちまして
HATSUは閉店致します。
2018年11月のオープンから
3年間という短い期間でしたが、
たくさんの方々に支えられた3年間でした。
HATSUに関わって頂いた全ての方々に感謝致します。
ありがとうございました。
初めての「初」や発信の「発」の意を込め、
名付けた「HATSU」。
夜の街「北新地」に誕生した「HATSU」は歓楽街であるこの立地に不似合いでありました。
なぜなら、ここには既存の料理から離れた「たくさんの初めて」が詰まってます。
「HATSU」という新しいドアを開けるとこれまで経験した事のない様な食の体験が待っています。
未知の調理法や忘れられた食材を掘り起こし、
古臭い取り合わせの高級食材や
変革すべき風土を解き放った
「初めての料理」をこの地から発信することに意味がありました。
「 新しい料理はシェフからのメッセージだ。」
どこかで読んだこの文章を再び心に響かせ、新しいステージへと向かいたいと思っております。
そして残りの期間も皆様に「初めての体験」をお届けできたら思います。

"Announcement"
HATSU will be closing the doors permanently after the last service on Saturday, January 29, 2022.
We feel that it has been such a short period of time, since the opening in November 2018. It has been three wonderful years with continued support from our guests, hailing from all over the world, to whom I would like to express my gratitude, because everyone of you has made HATSU the restaurant that it was.
Thank you very much, from the bottom of my heart.
"HATSU" opened in the entertainment district "Kitashinchi", which was a challenge, for an innovative restaurant in that area.
Nevertheless, we have created many unforgettable firsts, for our guests and ourselves by incorporating new and traditional but long forgotten local ingredients, in contrast to what was too often seen in Kitashinchi, with heaping amounts of luxury ingredients, plated in dated ways. In spite of or even maybe because of the location we were given, I feel like I have pushed myself just a bit further to come up with new, innovative and never seen before dishes, to attract true foodies from near and far.
No matter what, it has been truly special and meaningful for me to have had the opportunity to come up with and serve "HATSU philosophy" dishes for you, and is an experience I will take with me even as I embark on the next stage of my professional career.
I hope to meet you again and cook for you some day in the future, so until then!
