We are honored to have once again received the Michelin three-star rating this year.
I would like to express my heartfelt gratitude to everyone who continues to support us each day.
Recently, as I stand in the kitchen and cook, I find myself truly feeling:
“What a wonderful profession this is.”
Of course, the journey to this point has not been easy.
The pressure to maintain such a high level of quality is immense. There have been many times when I felt overwhelmed by that weight, and moments when I wanted to give up.
In today’s world, it is certainly possible to live without pushing oneself so intensely. Choosing a more relaxed way of life is, without question, one valid path.
Even so, being able to devote ourselves wholeheartedly to our craft, and to continue pursuing it together with our team, brings a deep sense of fulfillment—an indescribable feeling that reminds us we are truly alive.
Perhaps this kind of fulfillment lies in something that contrasts with today’s trends of efficiency and rationalization driven by AI. It may be found in the inefficiency, the irrationality, and the human connections that give us a sense of hope in living.
Precisely because we live in such a chaotic age, we hope to continue delivering the fundamental hope that lies at the heart of food to the world.
