Five years of any achievement is noteworthy, and we are incredibly proud to have been awarded 3 Michelin stars and a Green Star from the Michelin Guide Tokyo for the fifth consecutive year!

Thank you to our incredible team, partners, producers, and our beloved guests. We are inspired and motivated every day to give our best and bring smiles to everyone we encounter through our work.

“It’s no secret Tokyo has some of the best French cuisine outside of France, partly because local chefs study with the world’s best, as Shinobu Namae at L’Effervescence did with Michel Bras and Heston Blumenthal. The restaurant has built a strong following with its use of premium produce, innate seasonal sensibility, and clear pride in good service, not to mention its tranquil location. Pro tip: Lunch is an especially good value.”

From a simple idea to a comprehensive Impact Report.

On our journey towards becoming a regenerative restaurant by 2030, we realized we needed to track and analyze our impact on the world. This turned into our Impact Report, and we are proud to be releasing the second edition.

The report includes detailed data about our energy usage, waste output, gender diversity, employee wellbeing, and the producers we work with. We believe restaurants have the power to make the world a better place, and we hope to contribute in our own way.

As a restaurant with a platform, we believe it’s important to advocate transparency and continue to advance sustainability. Through this mission, we’ve reached the conclusion that it’s time for us to open up our doors and allow others to see in, so that the industry as a whole can improve and thrive.

Our way of sharing our information and data is through our inaugural Impact Report. It delves into detailed data about our sourcing practices, carbon footprint, gender equality, waste management, and our goal of becoming a regenerative restaurant by 2030.

We are by no means perfect or even close to it. We invite you to take a look at our Impact Report via the link in my bio and we hope to inspire others to start collecting data and sharing as well. Thank you for joining us on our journey toward a more sustainable future!
