It is with great sadness that I have to announce the passing of one of my chefs at Mark Jordan at the beach. Chris has been a part of my brigade on and off for the past 15 years from my time at the Atlantic hotel where I held my Michelin Star for 11 years to the hugely popular Cow and lobster by Mark Jordan and most recently at Mark Jordan at the beach.
I shall always remember Chris as a fellow Brummie and a passionate chef that had a real talent for flavor missed by most but not by me. His knowledge of food was also impressive and many a times we would talk about chefs gone by and who we had worked for over the years.
Chris was huge character in the kitchen frustrating at sometimes but hugely entertaining at most and known in the kitchen as Chrissotto ( those who know will know why😁)
You will leave a huge space in my kitchen Chris and missed by all the boys but I know you will be knocking out those all so funny plum tomato and goats cheese tatins we used to serve and sometimes burn under the grill at times !!!!🫣
We had so many fun times in the kitchen to many to post here but I will remember those times for a very long time so it’s with a heavy heart Chris Rest in peace buddy gone but definitely not forgotten😞

So I’ve just put beef fillet back on my menu and as I always order the whole fillets and prep them down in my kitchen it enables me to offer a few Chateaubriands which is the head of the fillet to large to serve individually so I serve it for two people to share with choices of sides.
In this case I serve it medium rare with proper shaved truffle and Parmesan chips, fine beans, onion rings, truffled cauliflower gratin and cafe creme sauce and proper béarnaise and it looks and tastes sensational.
Why not book a table and try it for yourselves but be warned they are in short supply so perhaps try and pre order yours with CJ first 👌
