On the slopes of Mount Etna lies the origin of the legend of the Palici: divine twins concealed at birth — twice, first by their mother, then by the earth.
From the Greek palin ikèsthai, meaning "born twice," popular tradition attributes to that very birth the bubbling of the sulphurous ponds of Naftia, in the Etna area, later named Palici and worshipped as deities.
From this bond with the land and with Mount Etna, our cuisine is born, where the history and character of the territory are transformed into flavour.
