We stand for science
We stand for truth, commitment, consistency.
We stand for excellence and the struggle to emprove ourselves day by day and therefore, we stand for coherence.
Bulle is what it is also because of Noma.
We stand with and Chef René Redzepi.
Today, I run my second restaurant, and amidst all the bu****it about sustainability, I can honestly say that Redzepi was right: you can't build anything of value by working 8 hours a day relying on the goodwill and motivation of your staff.
