Gnocco.

A dish that travels. It begins in Tuscany, with the Aglione garlic of Val di Chiana, tomato and basil, and finds its home in Val Gardena, in gnocchi shaped by hand one by one, half potato and half curd cheese, seven grams each.

Then the sea arrives: baby squid over the embers, a grating of aged ricotta, basil shoots.

In a Six-Dish Rope Menu.

Summer takes its place at the table, and the sea comes with it. Sea urchins, baby squid, a dentex from Sardinian waters: the Mediterranean travels north and finds its home in Val Gardena, where the earth answers with nettles, potatoes, garden vegetables and the deep flavours of the mountains.

This is how Chef Alessandro tells the season. Not a theme, but a way of listening: to what grows, to what arrives, to the two lands that have always shaped his hands.

Even the pauses have their own flavour. Grissini crafted in our kitchen with raw Storo polenta flour, and two butters signed by Bordier, guardians of the French tradition: one pure and natural, one enriched with seaweed.

Lobster, a story that earned its place.

Born last winter, loved from the very first table, this dish has now joined Chef Alessandro’s signatures of the In a Five-Dish Rope Menu.

Pan-seared and enriched by its own bisque, it rests on a velvety cream of Jerusalem artichoke and foie gras. A beurre blanc with Calvisius caviar completes the picture, bringing a delicate acidity that balances richness with depth.

A taste of the sea that found its home among the Dolomites, in the quiet intimacy of Val Gardena.
