A low-temperature egg over sautéed Swiss chard, with a blue-cheese fondue, fresh truffle and 12-day cured egg yolk grated on top.

We’d pour it with Domaine Denizot, a white with the freshness to carry all that richness.

A creamy 30-month Parmigiano risotto with goat cheese and zucchini, finished with lemon, basil oil, yuzu and fresh mint.

We’d pour it with Castello di Ama’s Purple Rose 2024, a Tuscan rosé that keeps every bite bright.

Our cellar isn’t put together from a catalogue. We go looking, visiting the growers, tasting at the source, choosing bottle by bottle.

It starts here, with the Chianti Classico of our own hills. Then it travels: elsewhere in Tuscany and across Italy: Trentodoc bubbles, Alta Langa, orange w**es, small estates most lists overlook. And beyond the border, to growers whose work we couldn’t leave out.
Reds, whites, sparkling, sweet. Nothing here by chance, every bottle chosen for a reason.

A list built the way we cook, with intention.

The season isn’t over, not out here.
Golden light, the Chianti hills, and two pizzas that earn their place at the table: the Margherita DOP and the N.6.

We didn’t stop at the food. Each one has its match from our list — the Margherita with Belvedere Amphiteatro, an orange w**e; the N.6 lifted by Claudia Augusta, Trentodoc bubbles.

Handmade pici, coated in a peppered pecorino cream, meeting ombrina and blistered friggitelli where you’d least expect them.
And a glass of red w**e alongside, drawn from our cellar and chosen to stand up to the pepper and the sea.
