Ogni ingrediente fresco arriva da luoghi raggiungibili in sessanta minuti dal ristorante: il Parco del Ticino, le prime valli bergamasche, i laghi prealpini, gli orti che circondano Milano.

Un territorio fatto di acqua, pianura e collina che, raccolto dopo raccolto, scrive i percorsi degustazione “L’Ora Etica” e “Vegetali Mon Amour”.

An hour is more than just a distance. It defines the area from which Horto’s cuisine takes shape.

Every fresh ingredient comes from places that can be reached within sixty minutes of the restaurant: the Ticino Park, the first valleys around Bergamo, the pre-Alpine lakes, and the farms surrounding Milan. A landscape shaped by water, plains and hills that, harvest after harvest, inspires the “L’Ora Etica” and “Vegetali Mon Amour” tasting menus.

“Dagli Orti di Gea: seasonal vegetables and fruit” is a snapshot of the season. A dish that evolves according to what ripens, what is harvested and what time has allowed us to preserve.

La giornata comincia in alto: una colazione nel cuore di Milano, con la stessa cura per la materia prima che guida la cucina di Horto.

Croissant dalla sfoglia fragrante, da aprire ancora caldi e accompagnare con una crema morbida. Lievitati al cioccolato, dove gli strati della pasta racchiudono un ripieno intenso. E poi la caffetteria, con il latte montato espresso a completare il primo rito del mattino.

Nella dispensa di Horto, fermentazioni, conserve, sottaceti e trasformazioni permettono alla materia prima di attraversare il tempo. Ciò che arriva dagli orti a sessanta minuti da Milano, viene lavorato per prolungarne la vita, preservandone acidità, struttura e complessità aromatica.

È parte del nostro sistema circolare ‘No Waste’: un lavoro quotidiano di pianificazione in cui ogni ingrediente viene osservato nella sua interezza e gli scarti diventano nuove preparazioni.

In Horto’s pantry, fermentation, preserves, pickles and other techniques allow ingredients to move through time. Produce arriving from farms within sixty minutes of Milan is transformed to extend its life while preserving its acidity, texture and aromatic complexity.

It is part of our circular ‘No Waste’ system: a daily process of careful planning in which every ingredient is considered in its entirety and scraps are transformed into new preparations.

On Horto’s terrace, the agapanthus opens its blooms one by one, following a rhythm that cannot be rushed. All around, the landscape grows, fades, transforms and begins again.

This is the principle behind the garden designed by architect and “botanical dramaturge” Raffaella Colombo: a horizontal, ever-changing landscape conceived to bring the heart of Milan closer to a natural world shaped by biodiversity, detail and gradual transformation.

Quando arriva la sera, la città accende le sue geometrie e da Horto lo sguardo cambia prospettiva. Sotto, Milano continua il suo movimento; quassù, il ritmo si distende.

La Galleria Vittorio Emanuele II si apre di fronte, il Duomo sembra a portata di sguardo. Più lontano, la Torre Velasca, il Castello Sforzesco, CityLife e G*e Aulenti disegnano l’orizzonte che, nelle giornate più terse, arriva fino al Monte Rosa.

Tra il verde della terrazza e le luci della città, la cena comincia ancora prima di sedersi a tavola.

As evening falls, the city lights up its geometry, and from Horto, the view takes on a different perspective. Below, Milan keeps moving; up here, the pace slows down.

The Galleria Vittorio Emanuele II unfolds before you, while the Duomo feels almost within reach. Further away, Torre Velasca, Castello Sforzesco, CityLife and G*e Aulenti shape the skyline, which on the clearest days stretches all the way to Monte Rosa.
