Settembre sta arrivando e nell’aria sembra di sentire già il profumo dei bomboloni, o frati, i nostri krapfen con il buco al centro, che richiama la chierica dei monaci. Un profumo che sa di fiera, di Luna Park, di ritorno a scuola e di quel senso di appartenenza che, qui, è profondamente lucchese.
E allora, mentre si avvicina una nuova stagione, anche il Bombolone cambia veste e si fa salato. L’impasto accoglie la lepre, ad annunciare l’imminente stagione di caccia; poi la frittura e, a completare il piatto, un paté di lepre, kumquat, estratto di ginepro, foglie di verbena e polvere di porcini.
Un piccolo morso che attraversa memoria, territorio e stagioni.
🇬🇧 September is just around the corner, and you can almost smell the bomboloni, or frati, already in the air: our local take on krapfen, with a hole in the centre reminiscent of a monk’s tonsure. A scent that speaks of fairs, funfairs, the return to school, and that deep sense of belonging that is so distinctly Luccan.
And so, as a new season approaches, the Bombolone takes on a savoury guise. The dough is made with hare, heralding the start of hunting season, then deep-fried and finished with hare pâté, kumquat, juniper extract, verbena leaves and porcini mushroom powder.
A small bite that brings together memory, place and the changing seasons.
