Some dishes make a quiet entrance and then instantly become unforgettable. Others seem simple enough—until that first bite changes everything.
Bolder flavors, combinations that genuinely work, and the same bad habit we’ve always had in the kitchen: we never let a dish leave the pass unless it meets our standards. (Yes, we know, maybe we’re a little too perfectionist—but what can we do?!)

Il nuovo menu di Buatta è arrivato.
E no, non abbiamo messo “due cosine nuove” tanto per fare scena.
Ci sono piatti che entrano piano e poi si fanno ricordare subito, altri che sembrano tranquilli finché non arriva il primo boccone e cambia tutto.
Sapori più decisi, combinazioni che funzionano davvero e quella solita cattiva abitudine che abbiamo in cucina: non lasciare uscire nessun piatto se non rispecchia i nostri standard (sì, lo sappiamo, forse siamo troppo perfezionisti, ma che ci possiamo fare?!)
Il problema più che altro sarà vostro: perché sarà difficile scegliere 😎​

Però tranquilli, da Buatta non si sbaglia mai.
Al massimo si ordina troppo.

The tuna lands on the table the way some people walk into a room: no introduction needed.
Seared on the outside, tender on the inside, with the kind of character that doesn’t need any special effects to get noticed.

It’s not the classic dish you order to feel light and at peace with yourself.
It’s the one you go for when you want to eat seriously well.
At Buatta, even the fish has personality.
And honestly, thank goodness for that.

Il tonno arriva al tavolo come certa gente entra in una stanza: senza bisogno di presentazioni.
Scottato fuori, morbido dentro, con quel carattere che non ha bisogno di effetti speciali per farsi notare.
Non è il classico piatto che ordini per sentirti leggero e in pace con te stesso.
È quello che prendi quando vuoi mangiare bene sul serio.

Da Buatta anche il pesce ha personalità.
E sinceramente…meno male!

A sauce that doesn’t forgive, eggplant fried the way it should be (not grilled, not “light”), and salted ricotta that falls on top and settles the conversation.
There’s no improvising here, and definitely no “lightening things up” just to please someone.
It’s that dish everyone says they know how to make… then it arrives at the table and you immediately see who’s good at talking and who’s good at cooking.
At Buatta, the Norma isn’t touched. At most, you ask for it again.
And when it’s right, nothing needs to be added.

Sugo che non perdona, melanzane fritte come si deve (non grigliate, non “light”), ricotta salata che cade sopra e chiude la discussione.

È quel piatto che tutti dicono di saper fare, poi arriva al tavolo e capisci subito è bravo a parlare e chi invece a cucinare!

She tastes everything, checks everything, redoes anything that doesn’t convince her at the first try.
“There’s no such thing as “it’s fine like this,” and definitely no “they won’t notice.”
If a dish goes out, it’s because she decided it should, and when she decides, there’s usually no discussion.
At Buatta, the kitchen has a rhythm, and Dina sets it.

It just happens.
You sit down, start talking, and at some point you stop checking the time.
Voices overlap, someone laughs too loud, someone else tells the same story again… and it’s fine.
Nothing to fix, nothing to make perfect.
Just people feeling good in the same place, without needing to explain anything.
You come for the food. Then you stay because it feels right.

Da Buatta stare insieme non è una cosa organizzata.
Succede.
Arrivi, ti siedi, inizi a parlare e a un certo punto smetti pure di guardare l’orologio.
Le voci si accavallano, qualcuno ride troppo forte, qualcun altro racconta sempre la stessa storia… e va bene così.
Non c’è niente da sistemare, niente da rendere perfetto. È solo gente che sta bene nello stesso posto, senza doversi spiegare.

Appena ti si avvicina, hai già capito che non è un panino tranquillo.
Bun con semi di sesamo, salsa BBQ e maionese che non stanno lì per educazione, sfilacci di suino fatti come si deve, verza all’aceto di mele che rimette tutto in riga e provola dei Monti Iblei che chiude il discorso.
Le frecce indicano gli ingredienti, la fame fa il resto.
Da Buatta anche quando sembra “solo un panino”, non lo è mai.
