North Arcot Style..
Chicken Briyani
Serves : 6-7
Preparation time : 15mins
Cooking time : 1 hr
Ingredients :
1kg Chicken
1kg Seeraga Samba Rice or Basmati
200 ml of oil
50 ml of Ghee
Cinnamon sticks 5 gms
Cardamam 6 nos
Cloves 6 nos
250 gms onions - finely chopped
100 gm of garlic paste
100 gm of ginger paste
50 ml of curd
Chilly powder 10 gm -one table spoon
250 gms tomatoes - finely chopped
4 green chilies
mint leaves one hand full
chopped coriander leaves one and half hand full.
1 lemon juice
Method :
To Prepare Chicken Masala :
Take appropriate pan add oil & ghee, add all three spices, 30 secs later add onions and fry it till golden brown. Now add ginger,garlic & chilly powder, mix well till the rawness of the ingredients goes,add curd, give it a stir, then add the chicken pieces & tomatoes. After a minute add green chilly, corriander & mintmint leave's. Now add measured water, Salt to taste, wait till you get the Masala to boiling. As soon it starts to boil add the rice & lemon juice and cook it for exact 6 minutes. And place the pan on top of the thava and cook it with the lid closed for 15 minutes on aa medium flame and 5 minute on alow flame. Switch off the heat
Rice and water Ratio :
Wash the rice 4 times soak it for 15 mins,The ratio of water to add is 1:1.25 times the rice quantity.
For Dum Process :
Take the same pan in which you have cooked chicken masala. Pour a ladle full of masala to the pan and spread it nicely.
Now spread another layer of half cooked rice. This way, prepare layers of chicken masala and rice.
Heat a flat frying pan or tava. Keep the pan on tava and cook on low flame for 20-30 mins. Switch it off and remove from tava only at the time of serving. Mix everything well and serve hot.
