This is the season of Surti Undhiyu
At the end of November, and with that slight sting in the air, Surti Undhiyu is welcome. The Meteorological Department has announced that winter has reached Mumbai. For this we have also started selling Undhiyu. This is winter food. Undhiyu made from mixed root vegetables grown in Gujarat between November and February
I love their rich colors. Especially, purple yam, yellow squash and green pumpkin. Small, round, thick brinjal, sweet potato, unripe banana, gourd, small potato, arhar ki dal and flat beans known as surti papdi are also among the ingredients of undhiyu. For the residents of Virar Mumbai, this dish is the same as Biryani for a Lucknowi or a Hyderabadi. You will also find undhiyu at Kathiawadi Dhaba restaurants in Virar during winters.
Soft fenugreek fist dumplings made of fenugreek and gram flour are also added to it. The mixture is spiced with ginger, garlic, green chillies, turmeric, cumin and black pepper. In which sugar, little water and vegetable oil are added. It is garnished with coriander leaves, lime, chopped peanuts and freshly grated coconut. There is no movement in steam cooking. This leaves the undhiyu dry and thick with vegetables but crisp and coated with a thin layer of spices and oil.
