Lai Xaak Kukura ( Chicken )

Did you know that Lai Xaak and Sarson ka Saag are both often called mustard greens in English—but they're not exactly the same!

Lai Xaak (Assam)
• Small, tender leaves
• Mild, delicate flavour
• Less bitter
• Cooks quickly
• A favourite during the monsoon season

Sarson ka Saag (North India)
• Large, mature mustard leaves
• Bold, peppery mustard flavour
• Slightly more bitter
• Needs longer cooking
Traditionally served with makki di roti

Although both belong to the mustard family, they are different varieties with unique flavours, textures, and culinary uses.
