Everyone remembers their first time. Mine was at Bat Island, Nine Tenth of a score ago.
When we landed on the island, only too late to realize that my fuqin friends completely/deliberately forgot that I was a vegetarian.
No paneer. No cauliflower. No potatoes for the bbq. The only vegetarian food on the island was the local flora, 2 dozen lemon, and unlimited Soro, And Let's not count the segregated rice from the chicken biryani.
The smell , as if from a past life experience, followed by hunger fueled by unlimited soro compelled me to take a bite outta the Roasting Chicken, It was one of the best things I tasted. The roasted aamchur and chaat masala on the marinade tickled the brain in ways that I remember it even now. ( Mouth salivating while typing this, even after having eaten 2 smokey fillets jn, goes to show the power of memories)
Cooking meats and veggies over an open flame feels visceral. It taps straight into our caveman instincts through our ancestors who sat around a fire, roasting meats and living in the moment, since thousands of years ago.
Flame-kissed, smokey and primal.
Enjoy it rolled in a wrap(shawarma style) , poi, even on a pizza .
We shall start selling in kilos as soon as this trend of loosing all the good employees to alcoholism comes to an end.
