Balchao Prawns with Fresh Mango Salsa

Built on the pillars of vinegar, spice, and oil, our Balchao is a study in preservation and intensity. Dried red chillies, garlic, and ginger are ground with whole spices and slow-reduced in coconut oil to create a thick and glossy lacquer. This concentrate sits artfully between a curry and a pickle, representing a centuries-old craft of flavor concentration.
The coconut oil is precise and purposeful. It carries the aromatics, tempers the vinegar’s edge, and allows the masala to cling to the prawns in a charred, smoky glaze.
This heat is met by a bright, seasonal raw mango salsa. The mango provides a sharp, cooling acidity that cuts through the richness, its fleeting freshness acting as the perfect counterpoint to the deeply aged spice.
