The Magical Instant!

There is a very particular instant when you are baking: a sort of special moment happen when the breads are just going out of the oven...

So, what's happen at this moment?
Very particular reactions occur at this moment:

- First, only during a few second, some delicate odors get out of the bread that you will never smell later, issued from the very delicate fermentation process: honey? pineapple? rain time? inside deep forest?

- Then, the bread clears steam in a uge quantity (20% of its weight), the steam is replaced by fresh air and during this exchange the crust is delivering its taste to the whole crumb! This is one of the reasons why very brown crusty bread are always more tasty than the others.

- The ultimate magic gift is the «song» of the breads craking under the big temperature change from 200° to room temperature. At this moment it's just like you could «hear» the good taste of your bread!

With more than 15 years bakery experience in France, allowed us to realize this dream to open a bakery in India. Fallen in love with Fort Kochi 5 years earlier, we decided to stay there to transform the dream in reality!

Small, solid and motivated team, Alice, baker and lover of the good products, Julien, baker and more than ever curious to discover new techniques of baking and James, natives of Fort Kochi, baker after a training in India and in France, with us since the beginning of this adventure, he knew how to help us on the ways of the dream.....

We will happy to welcome you in our little piece of paradize, to discover our goodies: breads, viennoiseries, cakes, salads, sandwiches,.......

The rain is coming...... Alice Délices is closed for one month. The real first season of our french bakery is finish today. Thank you all for this year rich in emotion. We meet in july for continue the beautiful story...with surprises, new recipes and lot of fun!!! 💞
