Assar Pandra – The Wild Edible Monsoon
The Wild Edible Monsoon at Parengtar was, without a doubt, one of the most humbling culinary experiences of my life.
28th June. Three hours before service, we were still waiting for the foraged ingredients to arrive. Every passing minute felt heavier than the last. The rain refused to let up, the clock wouldn’t stop ticking, and the pressure mounted with every second. There was no room for error.
Then came the controlled chaos, prepping and cooking across three makeshift kitchens, battling unpredictable weather, managing wood-fired stoves, and constantly adapting to whatever nature threw at us. Every dish demanded patience, precision, and trust in the team. Yet somehow, amidst the rain, smoke, mud, and madness, everything fell into place. The fire stayed alive, the food reached the table, and the evening unfolded exactly as it was meant to.
It was a reminder that some of the most memorable meals are born not in perfect kitchens, but in imperfect conditions, where resilience, teamwork, and the wild become the true ingredients of the experience.
