Lobster Rasam | Chawanmushi

One of INJA’s earliest creations, this dish has remained central to who we are. It begins with chawanmushi, the classic Japanese savoury egg custard, prized for its soft, silken texture and gentle depth, forming delicate base.

Into this flows the warmth of South Indian rasam, light yet bringing heat, and aroma to the custard. Butter-poached lobster rests on top, carrying the character of the broth, while drumstick marrow and fresh nasturtium add earthiness and brightness, allowing both traditions to come together in a single, quietly power-packed bowl.

Every city has dishes that feel like home, and for Delhi, Aslam’s butter chicken is one of them: rich, comforting, unmistakably its own. Aslam-san begins from that place of nostalgia, holding onto its spirit while allowing it to unfold in a different direction.

The tandoori chicken is brushed with shio kombu butter, served in a soft dashi cream, and finished with katsuobushi and shiso, creating a dish that looks toward Tokyo while holding fast to Paharganj.

The palate cleanser on the Tasting Menu 2025 revisits the familiar comfort of chaas, spiced buttermilk found across Indian tables, known for its cooling nature and quiet tang. That everyday refresher is reimagined through the Japanese practice of kakigori, where finely shaved ice becomes a canvas for delicate flavours.

A base of buttermilk panna cotta and buttermilk ice cream sets the foundation, soft and lightly creamy. Over it, chaas-infused ice is layered with notes of ginger, cucumber, coriander, and green chilli, creating a cold, airy spoonful.

Kushiyaki, the Japanese art of grilling on skewers, comes together with bharwan baingan, the Indian tradition of stuffed eggplant, in a dish that celebrates both craft and comfort. Each element reflects its roots yet speaks a shared language of smoke, flavour, and texture.

The eggplants are stuffed with a spiced filling and brushed with a glaze made from miso, sesame, and peanut chutney. The result is tender, gently charred, and beautifully balanced: a harmony of two cooking cultures, brought to life over the grill.
