Red Jaintia rice, Jastem smothered in Lakadong spice, Dai nai-iong lentils, a variety of pickles, salads, curries and broths, a hearty dose of vegetables, and meat, for those who are so inclined. The most important conversations deserve the right table. In today’s world of generative AI, handmade illustration carries a specific irreplicable quality - the human nuances that tell stories that make us feel seen. Now more than ever, it needs to be protected.

On Friday, 5th June, before we serve the first dinner of our new series, brings their Unplugged series to our table. An evening of conversation with award-winning picture book maker and art director Canato Jimo, on the value of the drawn line in the age of AI, and on his multigenerational culinary engagement with the land. The same connection to the land that Chef Ahmedaki Laloo brings to the kitchen, and that Zhouyu Hosts was built around.

This one is for the the artists, the designers, the illustrators, and anyone who believes that the most moving work always comes from somewhere undeniably human.

Meet the chef behind Edition 01 of Zhouyu Hosts. Chef Ahmedaki Laloo ( ) doesn't just cook food she uses it to tell a story. A graduate in literature who found her true language in the kitchen, Chef Ahme founded A'Origins ( ) Shillong to honour Meghalaya's indigenous food on its own terms: fermented, smoked, foraged, slow-cooked, and built entirely on generational wisdom.

She believes guests remember stories and textures long after the meal ends, and that’s exactly what she brings to the table. A five-course menu built the way she was taught: slowly, intentionally, and with love. A menu that journeys from region, to memory, to home.

For the first edition of Zhouyu Hosts, we’re partnering with to take you to Meghalaya. A cuisine of fire, smoke, and altitude, of foraged mushrooms and Lakadong turmeric, of smoked meats and heirloom rice. A cuisine that carries a subtle kinship with our own kitchen, as the threads of technique, produce, and flavour that connect Meghalayan food to Chinese cuisine run long and deep.

Chef Ahmedaki Laloo, founder of A'Origins in Shillong, is one of the most important voices in indigenous Indian cooking today, and her mission is singular - bringing Meghalaya's food heritage to the table with rigour, intention, and zero waste.
