**Wine of the Week** This week’s pick comes from Carrie, who has chosen the Almotriga Colheita, from the Douro Valley in Portugal. This is a delicious blend of Tinta Roriz and Touriga Nacional, with ripe fruit, gentle spice and a smooth, rounded finish.

Carrie’s perfect way to enjoy it? Start with a selection of our small plates, including our Skeaganore Duck Parfait with Cherry Gel, Pickles & Sable Biscuits and our classic Pork Belly with Crispy Smoked Black Pudding & Celeriac Purée.

And to finish… the limited edition Galway Sinan cheese with truffle. A beautiful way to round off the evening.

Laoise's recommendation is Señorío de Librares Crianza 2022, a beautifully balanced Rioja from Spain.

Crafted primarily from Tempranillo with some Garnacha, this elegant Crianza offers aromas of ripe cherry, blackberry and plum, complemented by subtle notes of vanilla, sweet spice and toasted oak from careful barrel ageing. Smooth tannins and vibrant acidity make it an incredibly food-friendly wine that's full of character.
Pair it with this weekend's new confit duck, haricot bean & toulouse sausage cassoulet.

The rich, succulent duck is beautifully balanced by the wine's bright fruit and freshness, while the savoury oak and gentle spice enhance the flavours of the Toulouse sausage and slow-cooked haricot beans. A lovely pairing that brings out the very best in both the wine and the dish.

*Wine of the Week* Ellie's pick for this week is a 2023 Chablis from Domaine Bernard Defaix. A beautifully crisp and elegant Chablis produced from 30-plus-year-old vines on the left bank of the Serein River. Vibrant citrus, green apple and classic mineral notes.

Ellie's perfect pairing? 🦞 Half Rosses Point lobster with garlic & chilli butter, served alongside a wonderful smoked mackerel-style caesar salad. The fresh acidity of the Chablis cuts through the richness of the butter while complementing the delicate sweetness of the lobster and the smoky flavours of the salad. Lovely texture and volume here, an excellent Chablis.

This week's favourite comes from one of our longest-serving team members, Sandra, who has been part of the Fish & Bean family for five wonderful years. We truly would be lost without her!

Sandra's pick is the beautifully crisp Villa des Croix Picpoul de Pinet often called the "taste of the sea." With its bright citrus notes, refreshing minerality, and zesty finish, it's a classic French coastal white that's made for seafood. Albert Baginski

an elegant Portuguese white from the Douro Valley, bursting with fresh citrus, ripe stone fruit, delicate floral notes, and a crisp mineral finish.

Sourced from old vines planted at a high altitude, it's blend of classic local varieties, Rabigato, Malvasia Fina, Gouveio and Códega do Larinho. This makes the perfect partner for our seafood dishes, especially our Tuna Ceviche Tostada and Chargrilled Prawns. The bright citrus character complements the zesty ceviche beautifully, while the wine's minerality and freshness balance the smoky, sweet flavours of the prawns.
