Last Friday (15th) we had the fortune to host, for our fourth Winemaker Dinner, the wonderful Mateja Gravner of the iconic winery of Oslavija, in Friuli, Northern Italy.

We were pairing local ingredients with legendary Gravner amber & red wines made from Ribolla Gialla 🧡and Pignolo 🍇 varieties.

We had:
Grilled White Asparagus / Aged Lardo / Hollandaise / Peach Vinegar x Gravner Ribolla ‘15

Line-Caught Seabass Crudo / Peanut & Hazelnut Rayu / Oranmore Organic Radishes / Chervil x Gravner Ribolla ‘16

Kinvara Lamb Rack / Spring Peas / New Carrot / Jus x Gravner Rosso Breg ‘08

Pigs On The Green Pork Fillet & Belly / Onion & Mushroom Broth / Caramelized Pearl Onion x Gravner Ribolla ’17

We are extremely ecstatic to tell you, that we will be hosting Mateja Gravner here in Fawn, for a very special dinner.

We are so excited for this collaboration, as we will be creating dishes to be paired with the legendary grape that is Ribolla Gialla, from the skilled hands of the equally legendary Mateja Gravner and Mateja’s father Joško Gravner. We will also have 2 vintages of Rosso Breg (made from Pignolo). Amphoras from Georgia (Qvevri) are being used here since the year 2000, a first for such project in Europe. Expect wines of mind-boggling complexity.

Mateja will be pouring Ribolla ‘15 ‘16 & the challenging ‘17 vintage along with Rosso Breg ‘ 07 & ‘08 and we will be cooking up a 6 Course Tasting Menu to pair with the wines.

Join us to here the Gravner family’s remarkable story next Friday (15th May) From 18:00 until 21:00(ish)

BANK HOLIDAY BUBBLES & BRUNCH Vol 3

We are gearing up for our third Bank Holiday Monday Bubbles & Brunch. Champagne Cocktails, Eggs & Fry Ups, Shakshuka, Beef Chilli etc are awaiting you.

Monday 4th of May (The Monday morning of the festival in Oranmore) we will be opening our doors at 11:00 and orders will be taken until 14:30.
As before, we won’t be taking bookings. If the weather allows it, we will also be serving on the terrace.

Our next Brunch after this one will be on the 1st of June.

And what a year it had been!
It feels like yesterday when we got water connected on the morning of the 25th of April 2026. Just 2 hours before opening our doors, a whole team of builders were still running around, rushing to get the final touches done, to make the restaurant functional and presentable. As we were getting closer to 18:00 opening time, more and more people tried to convince Jason & myself to postpone the opening, as it will end up being a disaster. We weren’t ready, but we already postponed 3 times due to ESB not being available to connect us to power. We never used the brand new custom made .ie bbq before. We had a menu, but we never cooked it before. None of the equipment was tested before as we had no power.
25th of April 2025. A day we will never forget. We finally had power and water that day. We had 26 people booked for dinner. We were more than determined.
We were opening that day. Stress level was in the skies, the fire alarm went off 3 times, the fire shutters closed, there was smoke… a lot of it.
Regardless of all that, we ended our first service with 26 very happy customers and it just meant the world to us. Years of planning and obstacles culminated in that first service.

We are one year old soon as a business, and we couldn’t even hope for a better first year.

We are blessed with the team of people we have here, making Fawn better and better every day, so firstly a massive thank you goes out to our Fawn Family! We couldn’t be here without you! ❤️

We are so grateful for all the support we received, from Oranmore, from all the surrounding communities, from our friends and families.❤️
