Something a bit different for our cheese course this week
Boyne Valley Bán Burnt Basque Cheesecake
(Try saying that x10 times fast)
Roasted Apricots & thyme flower, their juices spiked with chardonnay vinegar, and crunchy pumpkin seeds
This was our first time getting to create with Boyne Valley Farmhouse Cheese and have to say it was utterly delicious

This weekend’s menu includes local crab, steak, and hake. We foraged some Elderflower & meadowsweet and picked thyme from the garden… beautiful ingredients and thoughtful service

If there is one thing husband-and-wife team Dave and Siobhán have shown since opening Bearú, it’s that when you put quality, hard work and people first, people respond.....Tomorrow, they open the doors to Bearú Beag, a new chapter for a business that has become a real mark of quality in New Ross since first opening just a couple of doors down from this new venture.

We don’t take these things for granted at all. Every time we are nominated or even win an award fills us with pride and renewed energy to look after our guests.
I’m so delighted for the people that work hard every day in Bearú.
Cassie has been with us since the very first night and helps make dinner the special experience that you enjoy so much. We couldn’t do it without her and so many others working away
