We merge the fundamentals of Neapolitan Pizza with the best local Irish produce to bring you pizza by The Dough Bros. 72 hour slow proved dough, seasonal local produce, cooked in a 500 degree Stefano Ferrara wood fired oven "From Street Stall to Pop Up, From Pop Up To Permanent"
When one brother lost his job and the other just about to finish University, The Dough Bros started their pizza revolution with an Italian wood fired oven in a street food truck back in the summer of 2013. Things went far better than expected, and they managed to stay their for almost 2 years, winning numerous awards along the way. When their short term lease ran out there, it was time to move to a bigger better location on Middle Street, which is now the bros permanent home. As the McKenna guide said themselves " A Pizza Restaurant has never been so much fun, The Bros have created a new paradigm of how to set up a restaurant".

Pizza pals, our restaurant will be closed on Middle Street from Saturday through to Thursday next week.

After 10 years, our beautiful Stefano Ferrara wood-fired oven has taken a beating so we have had to bite the bullet and get the oven floor removed and replaced.

Fear not, you can still get your pizza fix in O Connell’s Bar Galway or a cheeky slice in Lil Bros Pizza 🍕We will sort you out 💚

We’re aiming to be back open Thursday October 8th. See ye then X

The Clam Pie is BACKKKK

Inspired by the world class clam pies from in New Haven and topped with the best clams in Ireland from in Co. Clare, we’re buzzing to have it back 🍕

We’re proud to say our mozzarella is made with 100% Galway cows milk from Dayana in and it was class to see and hear how our mozz is made to perfectly melt in our wood fired oven. We all got stuck in and made stracciatella by hand, thanks so much Dayana for a class day 💚
