Introducing our Pinoy Colada. This drink brings us right back to enjoying fresh, salty coconuts beside the bluest seas of Palawan. We had the freshest piña coladas you could imagine, made from coconuts that landed straight from the trees above, with the juiciest pineapples that lined the roads, piled high, under the bluest sky & brightest warm water.

Our new cocktail menu, called Take me There, is centred around trips, memories & experiences we’ve had on the journey to get to where we are today, and want to share a little about how they’ve shaped what we do at Kaldero.
First place to take you to is Palawan, the paradise islands of The Philippines & where lots of people head to for their first visit.
Inspired by the colours & tastes of Palawan, it’s our take on a Piña Colada, created with Havana Club 3 Anos, Havana Club, Planteray Coco Rum , House Pineapple & Black Pepper Datu Puti Coconut Vinegar Shrub, Coconut Cream & Blue Spirulina Foam & it’s absolutely delish.
Palawan stands out for its beauty, laid back island life & absolutely delicious fresh-as-can-be flavours, because most of the islands we stayed on had to be self sustaining due to the remoteness. We spent so much time swimming or travelling by both, our lips were salty. The vinegar from dipping lumpia into spiced sugarcane vinegar with barely cracked full peppercorns for lunch each day inspire the flavours we’ve brought into this drink.
This picture is the blue that we based the foam off of & it’s inspired the cocktail, not just because of how beautiful it is, but because we took this after stopping to deal with the second of FOUR total punctures we got on what should have been an easy 45 minute ride into El Nido, that turned into a 7 hour odyssey.
We rented a bike from a kuya who lived near the beach we were staying on, but after 15 mins on the road, it descended into chaos. A flat tyre followed by a dead battery, another flat tyre, a broken key, flat tyre again, dead battery again, no lights driving in pitch darkness before finally making it home.
